  • 1 yellow onion, diced
  • 4 to 5 garlic cloves, mincedRange preserved from original; use 4 cloves for a milder result or 5 for a stronger garlic note.
  • 1 packet Sazon seasoning, divided
  • 2 teaspoons chicken bouillonReduced from 1 tablespoon to lightly lower sodium while keeping the savory backbone.

  1. Heat 1 tablespoon of the avocado oil in a large skillet over medium-high heat. Add the rice and toast, stirring constantly, for 3 to 4 minutes until lightly golden and fragrant.
  2. Add the diced onion and minced garlic and cook for 2 to 3 minutes, stirring often, until softened.
  3. Stir in half of the Sazon, the bouillon, tomato sauce, and the water. Bring to a boil, then cover, reduce the heat to low, and simmer for 15 minutes without stirring.
  4. Remove the skillet from the heat and let it stand, covered, for 15 minutes more without stirring. Uncover and gently fluff the rice with a fork. If it seems dry, add just a splash of hot water.
  5. Slice the chicken into very thin strips.
  6. Heat the remaining 1/2 tablespoon avocado oil and the butter in a skillet over medium-high heat. Add the chicken in a single layer, then sprinkle on the garlic powder, onion powder, chili powder, cumin, remaining Sazon, salt, and pepper.
  7. Cook, stirring often, until the chicken is cooked through and lightly browned, about 4 to 5 minutes. Remove from the heat and keep warm.
  8. In a saucepan over medium heat, combine the evaporated milk, Velveeta, diced chiles, and pepper Jack cheese. Stir constantly until the cheese is melted and the sauce is smooth.
  9. Reduce the heat to low and let the sauce sit for 2 to 3 minutes, stirring occasionally, until slightly thickened. If it becomes too thick, whisk in a spoonful of hot water.
  10. To serve, spoon the rice onto plates, top with the chicken, and drizzle with the cheese sauce. Warm tortillas if desired and serve alongside.
