Instructions

  1. Make the peanut sauce: In a bowl, whisk together the peanut butter, soy sauce, warm water, rice vinegar, sesame oil, sugar, and chili garlic sauce until smooth and creamy. Taste and adjust with a little more water if needed so it pours easily.
  2. Bring a pot of water to a boil and cook the noodles according to package directions until just tender. Drain well and set aside.
  3. Heat the avocado oil in a large skillet over high heat. Add the ground beef and let it sit undisturbed for several minutes so it develops browned spots, then break it into small pieces with a spoon.
  4. Sprinkle the cornstarch over the beef and stir-fry for 15 to 30 seconds until it disappears into the meat.
  5. Add the grated garlic and teriyaki sauce. Cook, stirring often, for 1 to 2 minutes until the beef is glossy, caramelized, and coated. Transfer to a plate and keep warm.
  6. In the same skillet, add the white parts of the green onions and the stir-fry vegetables. Cook over medium-high heat, stirring just until crisp-tender and bright.
  7. Add the drained noodles and most of the peanut sauce to the skillet. Toss over medium heat for 1 to 2 minutes until the noodles are coated and silky. If needed, splash in a little more warm water to loosen the sauce.
  8. Return the beef to the skillet or spoon it over the noodles. Toss lightly or mound the beef on top, then finish with the green onion greens and plenty of black pepper. Serve right away, with any remaining peanut sauce on the side.
