Instructions

  1. Preheat the oven to 400°F. Lightly grease four ramekins or a small casserole dish.
  2. Melt 2 tablespoons butter in a skillet over medium heat. Add the celery, onion, and red bell pepper and cook, stirring often, until softened and fragrant, about 5 to 7 minutes. If the pan looks dry, add a splash of the seafood stock to keep the vegetables moving without adding more fat.
  3. Stir in the garlic and cook for 30 seconds. Add the flour and cook, whisking, for 1 to 2 minutes to cook off the raw flour taste.
  4. Slowly whisk in the heavy cream, whole milk, and seafood stock until smooth and slightly thickened. Stir in the Old Bay and a small pinch of salt and black pepper.
  5. Fold in the shrimp and crab. Cook just until the shrimp begin to turn pink and the mixture is hot and glossy. Stir in the cheddar and parsley, then taste and adjust with a little more pepper or a tiny pinch of salt if needed.
  6. Spoon the seafood filling into the prepared ramekins or casserole dish.
  7. Prepare the Cheddar Bay Biscuit mix with the milk according to package or homemade directions. Drop spoonfuls over the filling, leaving a few small gaps for steam to escape.
  8. Bake for 15 to 20 minutes, until the biscuit tops are puffed and golden and the filling is bubbling at the edges.
  9. Brush the hot biscuit tops with the remaining melted butter and finish with extra parsley before serving.
